THE PHILOSOPHY OF FRED
I was born in Gouda in 1964, live in Oostvoorne, but love Rotterdam.
If you know your way around, it's a very nice place. A working city. No nonsense?

I was not brought up on good food at home. Only during my education did I learn what enjoyment is and discover how much I love being in the kitchen. How much I love to experiment. To discover new, exciting combinations. I learned most of this in practice.

My cooking style is based on classic French cuisine, but I put my own twist on dishes.Recognisability is number one. With us, you will hardly encounter puffs or powders on your plate. Or, as you often see nowadays: gel. I prefer to use that for something else. Leaving the product as it is, that's what I like'.
